It’s all subjective and personal preference at the end of the day so to each their own.
Ultimately roasting darker can make lower quality coffee taste more consistent, since you’re tasting the roast as opposed to the bean.
It’s like having a filet mignon well-done, it’s just gonna taste like overcooked steak.

Its is CRAZY how far a brand can get you.
We started a brewery (House of Funk) that is ultimately failing, but we did our best and launched incredible beer and coffee, along with unique imagery and packaging. Despite failing and now being up for sale, the brand we built opened doors to new opportunities that we couldn’t foresee or been able to enter without the hard work we did from day one.
 FUNK Coffee Bar: The owners of Bentall Center in Vancouver wanted to create amenities for tenants that make it more appealing to sign leases. They envisioned a large expansive cafe which did happy hour beer at night. Being the only shop that did really good coffee and beer in town, they built a location with us in mind, and offered us a sweetheart lease deal which we would never had been able to get if it wasn’t for our brand. This cafe has ultimately acted as a launchpad to the coffee business thriving.
House of Lager: A multi-billion dollar development project was about to break ground in Squamish, and the developers wanted a brewery attached to their presentation centre to be able to talk shop with potential residential buyers after the presentation centre. Their GC, upstairs from our humble brewery, really loved our beer and brand, and introduced our team to the developers of Squamish Oceanfront.  Over the years, our brand has become disjointed, with the brewery failing, and the coffee business being the business that is thriving. So we’re relaunching everything for scratch, FUNK coffee, FUNK coffee bar, and the upcoming FUNK listening bar (shhh!) will the cafe that lives on, all powered by Bitcoin treasury, events and customers.  My advice to builders is do NOT make brand an afterthought. People need to understand what you are about, and how it relates to them. Done well, doors will open in ways that you could never have imagined. Especially with Bitcoin companies, technology is usually considered first and Brand is often an afterthought, but this is not how we are going to scale adoption. People need to think you are cool, and that you fit their lifestyle in order to want to relate. Think about Cash app and how sick their brand is, I WANT to be a user of this over something like Venom.

We’ve been sold a lie that coffee should “taste strong” (burnt) but the reason starcucks roasts like that is so poor quality beans taste consistent(ly bad) and your 17 year old barista can’t fuck up the extraction.
Quality beans, harvested ripe and processed with care from a uniform crop should be naturally sweet, and flavourful.
Real coffee, like real money, should be transparent and traceable. Proof of work in every sip.

I was very excited m to see Web Summit being held in Vancouver for this first time: putting our city as the meeting place for people working on revolutionary ideas.
Quantum, AI, high tech manufacturing! Crypto? Blockchain?
Where. Is. Bitcoin?
While states sign bills into law, and 100s of companies and new business models are created as Bitcoin becomes integrated into the financial system, there seems to be a total lack of awareness of something that we understand is as big , if not bigger than AI.
It’s a bit of a reality check as to how far outside the zeitgeist bitcoin actually exists in the tech world.
It makes me want to rally and throw a bitcoin party during web summit to let people know that we are here, and to maybe open some minds perhaps a moment earlier than they inevitably will be.

One year as a cafe with a bitcoin treasury.
We have accepted ~$5000 CAD in BTC payments, mostly during meetups. We’ve distributed over ~$550 CAD in BTC tips to our barista team and spent a couple hundred with other merchants.
We currently hold ~$7,300CAD equivalent of BTC on our balance sheet, a growth of around 45% during that period.

We were using slack for our team chat and it was costing us $5k/year.
I spun up an Amazon lightsail instance and now we run Mattermost which is basically open source slack for $140/year.

There’s still a lot of situations where not having a mediator might make commerce, think overseas vendors etc.
Don’t get me wrong I hate rent seekers like visa/mastercard and they need to go, but their networks actually minimize trust required with unknown vendors.

Immutable payments has trade-offs.
Having dispute moderating intermediaries is probably inevitable in many ways, it is a valuable service and does deserve a financial reward.
If your uber driver drops you off in the middle of nowhere or your airbnb guest trashes your place, these disputes have to be moderated somehow.
I think at some point there will be bitcoin payment escrows to facilitate commerce and we will likely pay for that service.
