yeah I'd do single mode with a few extra strands to give you spares then. Also gives you the option to windows out a couple of pairs for an intermediary stop if you ever need one.
Are you going to bury it or run it on polls? I've not done a lot of outdoor installs myself, rather preferring to use point to point wireless for such runs. Fiber might do better with the solar power on the RTU though.

depends on distance and environmental considerations but multi strand single mode is always my go to.

Don't forget that Broadcom also canceled all their partnerships. Everyone expected the price increases (though not the scope) but many of us in the business didn't expect to lose the ability to deliver VMware based projects. Had they just raised the price they wouldn't have an entire consulting and service industry loudly championing their competitors. There would just be grumbling about the price and tacit acceptance.

That's life running any type 2 hypervisor on Windows these days. Trying to do ESXi on Workstation on Windows is quite the bother. It should run though, you just won't be able to run any VMs on it.
Best option is to use Linux as the host OS, though I fully understand that's not always possible/ideal. The best path would be a bare metal box running Proxmox and hosting your ESXi nested on that.
That said, Broadcom sucks and can die in a fire, so find a better hypervisor to test.

in theory with beef anything that would make you sick if it was undercooked would be in the outside, this you can cook a steak rare and be okay because the outside is cooked enough. Ground beef risks surface contaminates bedding mixed throughout.
At least that's what I was taught... I still do my burgers at home rare though 😆
