That sounds awesome. I make biltong myself. I tried to get into jerky, but it's a lot more work.
Like I couldn't do a 24hr turn around to finished product like you're doing, but marinading the biltong is 5-10 min and then you hang it. Mother nature does the work for you for another week. It's slow, but it's not a lot of work.
Drying jerky over smoke or in an over or however you do it sounds like a lot more actual work.
