Use drywall as opposed to what, lathe and plaster? I've never lathed and plastered myself, but it looks quite labor intensive compared to slapping drywall in place, and labor is the major cost driver of most parts of home construction, so drywall being so common is probably more to do with cost reduction on building projects as opposed to any difference of the finished materials.
