Hi former art professor here. The standard text we used for drawing was Betty Edwards' "Drawing on the Right Side of the Brain." It explains a lot about how to really see what you are looking at, and how that translates into marks on paper. It's a little dated, especially the parts about brain hemispheres and their functions, but then again drawing hasn't changed that much in 500 years. It's still worth a read.
