Attempt number 2 at crafting my perfect cookie.
Working with pecans, dates, and dark chocolate, you'd think I've at least tried to make cookies before. Well... no. I actually haven't. Until now.
It's been on my mind lately, so I'm taking a stab at creating my own cookie - specifically one that I'd actually want to eat on a regular basis.
The first attempt was kind of a failure, but I learned from it. The flavor profile was there, but structurally and appearance-wise, it wasn't quite right. I had too much butter, so this time I dialed it back a bit.
I'm also experimenting with having the batter at room temperature vs. freezing it. I've found that browning your butter adds a lot to the flavor profile. Then cooling it in the fridge with the other half of the butter to bring it back to a cooler state - much like tempering chocolate - seems to work really well when whipping the wet ingredients together.
This one is getting pretty close to perfect, but I'm going to keep testing and refining.

Paying almost exactly €1000/year for electricity for a family of 4-6 adults (depending upon who is currently living with us).
