I used 2 shallots but I would say like half the weight of the mushrooms, ish, just follow your heart

Sear steak, build fond
Deglaze with stock, reserve liquid
Sear mushrooms, then add shallots, fry until translucent, add garlic, remove
Add tallow and flour in equal parts (1tbsp each) cook for 3-4 mins on medium
Add milk slowly and whisk
Add back mushrooms
Add Dijon mustard and salt and worshestershire (whatever) to taste
Add whatever fresh herbs you got at the end
Do it, so good, I feel amazing right now
