In fact, many adults around the world lose their ability to digest lactose after childhood. Some populations evolved lactase persistence specifically because dairy became such an important food source for them. That's actually evidence of humans adapting to dairy consumption, not evidence that humans were originally designed to drink another animal's milk throughout adulthood.
Cheese and butter also developed partly because processing milk makes it easier to store and, through fermentation, can reduce lactose.
I'm not debating cheese or dairy products, just milk, processed or raw
