I'm dictating this answer into my phone. I definitely use the dictation on my phone as a primary input method.

It works okay. But I don't like doing anything that requires structure this way. You can't do bullet points or easily manage things like carriage returns. You definitely cannot italicize or bold face text that you are writing.

I have no idea how you could compose dialogue this way. At least not without going back to edit it later.
