The trust is placed on Amazon and as far as I understand their chips are audited by many independent third parties around the world who literally take electron microscopes to verify that the circuitry is doing what they say it is doing.
But yes it is still possible that something is missed and that Amazon is somehow spying or hiding what's going on.
