Ok initial thoughts, since I have been encouraged*
Battery-powered and USB.
Long display of 6-9 digits or so, constantly scrolling random numbers at 1Hz when on USB. Button to fix a random number on the display for 60 seconds. When running on battery the display turns on, displays the random number for 60 seconds, then turns off again.
Streams random numbers out of serial port when connected to USB so you can use it as an entropy source.
