Back in the day. I used the Wyze (Xoami rebrand) cameras that were super cheap at home depot and microcenter and stuff. I used to pick them up at the microcenter in fairfax lol on the clearance shelf. There was an aftermarket firmware (then an official one which was short lived) that turned them into rtsp streaming cams with decent night vision 1080p 30fps. It hogged a lot of wifi bandwidth though.
Put them on a private network and dedicated wifi accesspoint then streamed the footage to an NVR server I built with Blue Iris. It was a more plug-n-play solution, but they needed a paid license which I was fine with because it's genuinly good software and uses hardware acceleration.
Anyway, I know it's not past your knowledge, but more time than you probably have to invest, but it's totally offline, closed circuit and worked reliably for a few years until I moved out of there. Now days im sure there are so many more solutions. But I was super poor and built it all with junk parts for maybe $50 for 6 cameras.
