Pollini's version of his waltzes are the next thing to get, they're mint and very accessible/listenable. then you can listen to either the Preludes or the Etudes, both kinda difficult but filled with genius. the Etudes are infamous among pianists for being some of the hardest pieces possible to play. then if you want more structured grandiose stuff check out his sonatas (skip the first) and ballades. then if you're still thirsting for Chopin you can listen to his polonaises or mazurkas. there is also just random individual gems he wrote you will find like fantasy impromptu which is my favourite piece ever. the Em piano concerto which is also insanely good and popular, and other stuff like the grand polonaise
