The composability is what makes it for me. Don't like how the $EDITOR behaves? Swap out your vim for vi or ed(1) or emacs or nano or whatever. Prefer something other than git for version-control? No worries—there's Fossil, Mercurial, Subversion, CVS, RCS, SCCS, or dozens of others. Or maybe you prefer a more visual front-end like tig(1). Want something more than classic mv/cp/ln/cat/less type commands for file-management? there's mc, nnn, ranger, and a slew of other such tools.
All those components are arbitrarily swappable yet still play well together, something far more difficult with all-in-one IDEs.
