The “Chinese components” panic is mostly silly pandering (most electronic components have no security implications), but the larger issue is that ANY device as complex as a voting machine or tabulator is subject to the possibility of compromise. Depending on their impenetrability is foolish.
Fortunately, there are proven ways to ensure the integrity of elections conducted with imperfect components. Risk-limiting audits provide measurable assurance, and are already done in many jurisdictions.
