If you want AC and an electric vehicle solar will go a very long way to keep your spend on grid low, but you'll need a pretty extensive panel system and batteries of you want to drive a lot.
Solar for AC in terms of just running a decently efficient minisplit is much less of a total spend and you could even do it with batteries.
I don't know what the regulations are on grid sellback, but with a decent amount of panel and a hybrid inverter, you might not even need batteries to offset most usage.
You can always start small and expand, too.
