Well Signal don't store your number in plain text. It's hashed. Only people who already know your number can message you and you can turn this off entirely and configure it however you want.

In regards to getting free SMS numbers, just search "free sms verification number" via your favourite search engine. You'll find a plethora of numbers. I understand a lot of them may have already registered with Signal but if you hunt around you'll find something. Remember these are public phone numbers though so everybody can see the text messages going to them - this is what make it anonymous. To prevent anybody re-registering with your phone number and sending messages as you you'll want to enable registration lock in Signal's settings. After this you can just communicate via your username.
