Dice rolling skips any device or software or third party. The only thing left is the hash function, and SHA-256 is a public spec (battle-tested by cryptographers for 20+ years) you can implement yourself, run offline, and verify by hand against test vectors. I do think this is different (at least less blind trust) than trusting a manufacturer's black box - which a lot of people seemed to have done by letting a Coldcard (and probably all kinds of hww) do everything for them. I'm not trying to blame them either.
