By default, GrapheneOS works with all of the carriers supported by the stock Pixel OS. GrapheneOS adds a carrier overrides feature usable to force the availability of 5G, VoLTE, VoNR, VoWiFi and cross-SIM calling. This means GrapheneOS can be used with those features on carriers in countries where Pixels aren't available and haven't done compatibility testing to mark those as available. It makes it work better globally.
