Sadly despite boltz being completely opensource there aren't many operators: https://swapmarket.github.io/swap
Ideally the wallet providers would host their own instances and actually encourage fee competition by selecting the cheapest offer out of multiple options. But none of that has happened, so every swap based wallet just hard-codes official boltz.
