I don't think ground lamb is as good as ground beef in most western dishes. Middle Eastern dishes are different.
Slow cooked lamb shoulder & leg are amazing & take half as long as a brisket.
Lamb cutlet are basically lamb ribeye and best cooked like one - over high heat (charcoal baby). Butchers often trim the fat cap on the rack but that fat is so damn delicious & they pass on the cost. NZ probably does that before they export & ship trimmed racks & loins to maximise freezer space.
I cooked lamb wrong for a long time.
