Why we - I’m Catholic, but I’m including both Orthodox as well - don’t worship her, or any of the saints.

I think a major issue is that the three apostolic churches above define Worship completely differently than protestants.
The Sacrifice of the Mass/Divine Liturgy is exactly what we mean.
