Short answer: with a different ribbon cable and case, yes.
The Zero and the Zero 2 are the ones that will fit in the case and not interfere with the LCD connection.
From a software point of view, nearly any Pi would do (certainly the 3/4/5 models), but it's mechanically troublesome. The latest revision of the board uses a ribbon cable for the LCD, which would let you route around the larger form factor Raspberry Pi. It could even use the stock SD card image.
There are also the raspberry pi knock offs such as the orange pi and banana pi. They are not quite as compatible as they first seem. In theory, they should be able to work if you build a custom SD card image. I tried once and failed, but that was years ago and I've learned a lot since then.
If the supply problem doesn't clear up soon, I might have to take another stab at that. It's just that... I want to spend my time building awesome hardware and putting it in the hands of people. Getting another board working seems like a side quest that detracts from my mission.
