In my experience anonymous domain registrar will register your domain under their own name and lease it to you - they are legally owning it which can cause issues down the line.
However if by KYC you mean check your passport and such, domain register don't generally do that. They'll trust that you shared the correct personal information. Of course, if you use funky ones, you may end up the same kind of ownership issues that the other option above.
In practice I never had to justify my identity with a register, but since a domain name can be very valuable it's still something to consider.
