For my phone, I have GrapheneOS (npub1kwa…e0nj) installed. It's the best balance of privacy, security, and usability out there.
For Google Maps, I use HERE WeGo (https://wego.here.com/). It's got ads and stuff, but you don't need an account to turn on the traffic data - and it has a pretty good offline mode. The bad part of that app is that the location database is dated. You don't want to try to find the nearest Dunkin for example, but if you have an address already, it's perfect.
